Mezcal

Mezcal can be made from dozens of varieties of agave, each with its own character; add in variations in production and regional growing differences, and you start to grasp the broad category that is mezcal. One common thread, though, is that the agave is always harvested by hand and roasted in underground pits - hence the smokiness mezcal is known for.
